2-in-1 Alert! Shrimp Grilled with Pineapple-Peach BBQ Sauce
People, people, people! Summer is here and our grills are out. Again with last week's theme of southern summer meals, Atlanta style, here is a sauce that's going to make you rethink the power of the peach. Understand me when I tell you. It's sweet, smokey, tangy, bold, and light somehow. Its fun as a marinade or grilling sauce (as I used here on the shrimp). You can also use it as a dipping sauce. It works beautifully on shrimp, salmon, chicken, pork, and veggies. Enjoy!
Pineapple-Peach BBQ Sauce
INGREDIENTS
1 TBS extra-virgin olive oil
1/2 medium onion, chopped
2-3 cloves garlic, minced
2 medium peaches, peeled and chopped
1 cup fresh pineapple, chopped
3/4 cup ketchup
1/2 med white wine
2 TBS honey
1/2 cup apple cider vinegar
2 TBS honey
2 TBS Dijon mustard
2 TBS Worcestershire sauce
1 tsp hot sauce
Optional: 2 tsp liquid smoke flavor, or 1 1/2 tsp smoked paprika
Salt + white pepper, to taste
INSTRUCTIONS:
Heat oil in 12-inch skillet over medium heat. Add onion and garlic, saute for 2 minutes, or until onions are slightly translucent.
Add pineapple and peaches. Continue to saute until the juices begin to release. Remove from heat and allow to cool.
In a medium bowl, mix your remaining ingredients. Add mixed ingredients and fruit, garlic, onion to a food processor or blender. Pulse until its a smooth sauce.
Add sauce to a medium sauce pot. Cover and cook over low heat for 15 minutes.
Enjoy as a glaze, marinade, grilling sauce, dipping sauce, as you choose.
Grilled Shrimp
INGREDIENTS
1 lb. large shrimp, cleaned and dry, tail on
1/4 tsp salt
1/4 tsp white pepper
1/4 tsp garlic powder
1/4 tsp onion powder
1 TBS extra virgin olive oil
2 TBS Pineapple-Peach BBQ Sauce
Optional: served with fresh peach slices and jalapeno peppers
INSTRUCTIONS
Lay shrimp out on a plate. Brush both sides with oil.
Sprinkle salt, pepper, and powders on both sides.
Brush both sides of the shrimp with sauce. Allow to sit for 10-15 minutes. Or, overnight in the fridge for more flavor.
Over medium-high heat on the grill or grill pan. Add shrimp and grill for 2 minutes on each side.
Remove from heat, allow to rest with a piece of foil placed on top. Do not tuck the foil. just place it on top.
Serve with fresh peach slices, peppers and sauce for dipping. Enjoy!
