This sweet rich goodness will make vegans, vegetarians, and carnivores alike jittery for more! Using only strong brewed coffee and a few other ingredients. It works beautifully on chicken, vegetables, steak, tofu, pork and most fish. You can use it as a marinade, or reduce it to a finishing glaze over the stovetop. Here's a picture with it over my Simple Grilled Chicken. This is for about 4 servings.
11/2 cups of very strong dark coffee (I use decaf French)
2 TBS Honey
2 garlic cloves, minced (grated is even better)
1 tsp fresh minced ginger (Sub: 1 tsp ginger powder)
1 tsp ground mustard (optional)
2 TBS extra virgin olive oil
2 tsp Worcestershire sauce
1 tsp apple cider vinegar
2 tsp soy sauce (light preferred)
2 tsp salt + 2 tsp pepper (more or less to taste. It should be sort of well salted)
In a medium mixing bowl, add all of your ingredients. Allow them to cool on your counter top. Refrigerate until ready to use. Lasts for a couple of weeks.
For a marinade: Use as is to cover your proteins for 30 mins or up to overnight for meats and poultry. For veggies, brush it over generously just before grilling.
For a glaze: boil down unused marinade over med heat, until reduced to a thick sauce. Use it as a glaze over finished veggie and or meats.
