Friday Night Happy Hour Cook-along Ingredients - Brazilian Coconut Chicken & Kale Rice 10.23.2020

Hi Everyone! We're having out first Friday Night Happy Hour Cook-Along. For those who'd like to participate, here are the ingredients for tonight's class. Instructions will be shared during class and posted later. Hope to see you tonight at 6:00 PM via Zoom!

  • 3 medium cloves garlic, smashed

  • 1/4 cup fresh lime juice + lime zest, to taste

  • 2 tsp. coarse salt + more to taste

  • 1 tsp cayenne pepper

  • 2 tsp cumin seeds (sub: cumin powder)

  • 4-5 boneless, skinless chicken thighs, cut into large chunks

  • 2 1/2 TBS flour, for dredging

  • 3 tbsp. olive oil

  • 3 TBS coconut oil (Sub: red palm oil, for a more authenticity)

  • 1 medium white onion, thinly sliced

  • 1 cup coconut milk

  • 1 TBS honey (Sub: agave nectar)

  • 2 TBS rice vinegar (Sub: white wine vinegar)

  • 1/2 green bell pepper, thinly sliced

  • 1/2 green bell pepper, thinly sliced

  • 2 medium vine-ripe tomatoes, halved, seeded, and sliced

  • 1⁄2 cup cilantro leaves (2 part leaves: 1 part stem), coarsely chopped

  • 3 green onion stalks, thinly sliced

Kale Rice

  • 1 1/2 TBS coconut oil

  • 4 cups white rice, cooked and chilled

  • 2 cups kale, finely chopped

  • 1 medium red bell pepper, thinly sliced

  • Salt + Pepper to taste
