My favorite foods are the ones that I prepare at home, in solitude. They aren't fancy or complicated, rather simple and good. Even in the company of others, I can find myself transported to a place of alone and introspection through the preparation process. With each rinse, chop, blend, a breath is taken, and I am elevated into a place of peace and focus. Meditation. A space where I contemplate ingredients, like words or notes to music, how they come together conveying messages which evoke emotional reactions or feelings. These simplest song or statement can often be the most powerful, as can the simplest ingredients.
Take mango salsa for example. To make it only requires three simple ingredients and what it lends to any meal is so powerful and inspiring that it takes you back; pauses you for a moment as you take it in. It changes things. There are so many variations of its expression that it becomes easy to forget just how straightforward and good it is in its basic form.
The mango is sweet, firm and its nectar spreads, sharing its goodness with all that comes into contact with it. Cilantro is invigorating, crisp, adding a lively freshness. The onion's flavor lingers long after its consumption, serving as a memory of how good it was. The combination is brilliant. It's like love. Love is sweet, fresh, and lingers long after it's been experienced. You can make it, receive it, or just sit back and admire it for its beauty. Mango salsa makes everything taste better, when added.
Some people accent their mango salsa with the crunch of red peppers, heat of jalapeños, or the comfort of avocados. I sometimes add a fresh Georgia peach to my mine. The peach compliments the mango. Where the mango is firm and sweet; the peach is softer, with an assertive tanginess that makes her presence known. Their flavors can be highly intense, depending on their maturation during the growing season. They play off of each other. Peach-Mango Salsa tastes like Jill Scott's You Love Me.

There are many things that can be added to mango salsa, but the only required ingredients are mango, cilantro, pepper and onion. The rest is just how you choose to express it.
Mango Salsa (Serves 2)
• 1/2 fresh slightly ripened mango, chopped
• 1/4 cup red bell pepper, diced
• 2 tsp red onion, diced small (optional)
• 1 jalapeno, seeded and diced
• 1 TBS cilantro, diced with stems
• 1 TBS fresh green onion, chopped
• 1 lime juiced
• Salt + pepper to taste
Combine all ingredients in a medium mixing bowl. Mix lovingly. Enjoy!
