To all of my chicken-avores. This, my friends, is your moment! This easy grilled chicken recipe will be the hit of all of your in and outdoor grilling escapades. Also, you can check out my Good Day DC demo of this on their July 4th segment, below.
Use the easy Sweet Coffee Marinade recipe
4-6 boneless, skinless chicken thighs, fat not trimmed.
1/2 tsp salt + 1/2 tsp
Marinate the chicken in the Sweet Coffee Marinade for at least 30 mins, up to overnight in the fridge. Remove from marinade and drain. Keep the marinade. You're going to cook it down into a hot glaze for the chicken. Allow to sit and get closer to room temperature before grilling.
Heat your grill to med-high, or a non-stick indoor grill or pan. Brush your pan or grill with a little oil first.
Grill one side for 4 mins, then give it a quarter-turn. Continue to grill for 4 more mins. Flip sides and repeat. Using the sharpest tip of a knife, check the thickest part to make sure it's cooked completely. Or, you can insert a cooking thermometer into the thickest part to make sure it registers at 160 - 165 degrees.
To glaze: Take the remaining marinade, place it in a skillet and bring it to a boil for 3-4 minutes, reduce and simmer until thick like a glaze. Drizzle over chicken, just before serving.
